Protein Packed Pumpkin Cupcakes - 2 pumpkin spice meal replacement shakes - 1 cup gluten free pancake mix - 3 Eggs, 2 egg whites - 1/3 cup cold water - 1/4 cup milk - 1/4 cup applesauce Frosting: - plain greek yogurt - peanut butter (to taste) - vanilla (to taste) - cinnamon sprinkled on top 1. Preheat oven to 350 2. Mix all ingredients in large bowl. 3. Pour in cupcake pan. 4. Bake 13-20mins until golden brown. 5. Let cool and frost.
