Root Vegetable Tian. I sliced up (did use a mandolin) two varieties of purple sweet potato (Okinawa and Stokes), Japanese sweet potato, garnet yam, celery root, carrot, sunchoke, rutabaga, golden and red beets and a few parsnip slices scattered throughout.
