Parsnip Mashed Potatoes- Description It started with parsnips. Lately, it seems like every cooking show I watch, they’re doing something with parsnips. I’d never even heard of parsnips before last month, and now they’re everywhere. I suppose that’s how it always goes. So what is a parsnip? Parsnips are a root vegetable; they look like white carrots, only less sweet. So, I decided that for my first parsnip dish, I’d go with something I mastered long ago.
Parsley is a member of the carrot family that includes celery, fennel, anise and dill. Parsley root is light beige, shaped like a carrot, but slender like a parsnip. The flavor is described as a taste between celery and carrots with a little parsley leaf and turnip. Parsley root has a more delicate, sweeter and more herbal taste than a parsnip....

Do you try to cook with in-season produce year round? We do! I love parsnips which are in season most of the year...they are fantastic roasted with a medley of carrots with olive oil, salt and pepper and maple syrup. Foodland Ontario is a great site that lets you know what is in season now.
Better Than Mashed Potatoes?! Whipped Parsnip and Cauliflower with Kale. I know what you’re thinking: What is this blasphemy?! I mean, how can you really improve a cozy comfort food like mashed potatoes—especially if the “improvement” doesn’t even contain potatoes at all? I promise I’m not just spewing crazy nonsense.
