Easy Dark Oven Roux See that chocolately brown jar of lovely goodness? This, my friends, is pure gold to a southern cook! What is it you say? It is a deep, dark red Cajun roux, and one that is most appropriate for gumbos or meaty stews. It's a roux that is time consuming to achieve on the stove top, taking a great deal of patience, and a lot of attention to get to the right color without burning it or yourself.
It took me FOREVER to find this recipe! This is the Official recipe from Chef Timothy Kopaceski at the Disneyland Resort. *Ingredients can easily be substituted for Vegan friendly ones!* ENJOY- MB #Vegetarian #disneyland #gumbo
It’s Mardi Gras time, and so it’s time for crawfish. Crawfish Cornbread is a recipe I have seen in many Louisiana community cookbooks. No idea if this is a traditional Cajun recipe, or started it’s life on the back of corn bread mix box. This version is packed with crawfish. Use frozen crawfish tail meat. This cornbread is lovely beside a bowl of Red Beans and Rice. Hearty enough to serve with a nice green salad for a meal. http://therunawayspoon.com/blog/2013/02/crawfish-cornbread/
