PUMPKIN STUFFED WITH EVERYTHING GOOD: Shortly after I was given this recipe, I started keeping a list of whom I'd made it forbecause I loved it so much, I was sure that if I didn't keep track, I'd end up serving the dish to the same people over and over. The idea for it came from my friend Hélène Samuel's sister, Catherine, whose husband grows pumpkins on his farm just outside Lyon.
Everything Sauce: ¼ cup apple cider vinegar, ¼ cup olive oil, ¼ cup honey, 2 tablespoons Dijon mustard, ¼ cup plain Greek yogurt, ½ tsp. Sea salt, ½ tsp. freshly ground pepper, ½ tsp. cumin (optional, but so delicious) We use this sauce as a dressing for coleslaw and regular salad, as a marinade for chicken fajitas, or as a general dipping sauce. Wonderful flavor!
