Zucchini "Crab" Cakes (tastes like crab cakes, but with no crab).Make sure you squeeze out the excess water from the zucchini after grating it or they'll be soggy. I would bake instead of fry these. I would also serve it with some sort of sauce, maybe a homemade tarter or a garlic aioli?
