The fastest way to make a camping trip even better is by serving up these chili cheese fries, made over the campfire.
Hobo pouches (my version): Place bone in chicken pieces in large square of foil. I use chicken leg quarters, but any cut is OK. Make a pouch around meat. Add 1/2 onion, 1 potato quartered, and 1 mini corn cob (or 1/2 ear). Generously salt and pepper. Drizzle hot sauce over contents. Sprinkle Lawry's seasoning salt, paprika, garlic cloves (the more the merrier!!), and 1-2 tablespoons butter/margarine on meat and veggies. Place pouches on lined baking pan. Bake for 2 hours at 350. Remove from oven, uncover, and turn oven up to 400 degrees. Spread soft garlic onto contents. Bake for 30-45 minutes, or until chicken is brown. Top with parsley for color. (Note- I didn't use parsley in this photo. My hubby hates it and this was the prettiest pouch!)
White Beans with Smoked Turkey Thighs (about 1 pound) Rinse and sort the beans for any pebbles. Soak beans for 2 hours. Add the beans, smoked turkey meat, roasted garlic clove (1 tsp olive oil over garlic, wrap in foil and bake in 350 oven for 10-15 minutes) 1 tablespoon worstershire, 1 teaspoon garlic salt and season salt to the crock pot. Add 2 cups chicken broth and 2 cups water. Cover and cook on low about 6 hours. Add 1 cup of frozen corn the last hour before the beans are done continue to cook until beans are tender. Season more to taste. Serve with cornbread.
