Creamy Caprese Quinoa Bake...2 c cooked quinoa, 1 c of your favorite pasta sauce, 2 tb tomato paste, 1/3 c heavy cream, 1/3 c parmesan cheese, 1 c mozzarella, divided, 1/2-1 c grape tomatoes halved, 1 lg bunch fresh basil cut into ribbons, 1/2 tsp crushed red pepper, 1/4 tsp salt, 1/4 tsp pepper. Bake at 350 degrees F 10-15 minutes until cheese is melted.
