Pumpkin Hummus ~ Given the use of pumpkin in this humus it only seemed natural to add a hint of cinnamon to make things a little more exotic. glazed pork chops- amazingly good! I followed the recipe except that I put them in the crockpot with about 2-3 cups of apple juice and let cook on low all day (about 8 hours). SO tender, no need for a knife!
Swedish Baked Potatoes..Preheat oven to 425. Put the potato on chopping board, flat side down. Start from one end, cut almost all the way through, at about 3 to 4 mm intervals. Arrange n a baking tray insert the garlic in between slits. Scatter butter on top. drizzle olive oil and sprinkle sea salt and black pepper. Bake for about 40 minutes or until the potatoes turn crispy and the flesh is soft.
