Indian Pudding

NYT Cooking: Indian pudding was a compromise. A mass of cornmeal, milk and molasses, baked for hours, it was born of the Puritans’ nostalgia for British hasty pudding and their adaptation to the ground-corn porridges of their Native American neighbors.
