Chicken and Avocado Salad with Lime and Cilantro--- Chicken and Avocado Salad with Lime and Cilantro (Makes 4 servings; recipe adapted from Avocado Chicken Salad from Becoming Betty, which my sister Pam's friend found on Pinterest.) Ingredients: 2 cups cooked chicken, shredded into large pieces 2 medium avocados, diced 1 T + 1 T fresh squeezed lime juice salt, to taste (I didn't use too much salt because you can always add more at the table.) 1/4 cup thinly sliced green onion 1/2 cup finely chopped fresh cilantro (or chop it more coarsely if you prefer) 2 T mayo or light mayo Instructions: Shred the chicken apart until you have 2 cups of chicken shredded into fairly large chunks. Dice the avocados into medium-sized pieces, mix with 1 T of the lime juice, and season avocado with salt to taste. Thinly slice the green onion and finely chop the cilantro. Mix mayo and 1 T lime juice to make the dressing. Put the chicken into a bowl large enough to hold all the salad ingredients. Add the sliced green onions and dressing and toss until all the chicken is coated with dressing. Add the avocado and any lime juice in the bottom of the bowl and gently combine with the chicken. Then add the chopped cilantro and gently mix into the salad, just until it is barely combined. Serve right away or chill for a while before serving. This could be served inside pita bread or sandwich bread, or inside crisp lettuce cups, but we just ate it as a salad.

Prosciutto, Tomato, and Olive Spaghetti Recipe Type: Main Course, PastaPrep time: 25 mins Cook time: 30 mins Total time: 55 mins Serves: 4 Ingredients 450 grams (1 pound) dried spaghetti 1.8 litres (8 cups) cold water 2 teaspoons sea salt 3 tablespoons extra virgin olive oil 5 garlic cloves, finely minced 2 shallots, finely minced 130 grams (~ 1 cup) black olives, pitted (I used Taggiasca from Italy) 3 to 4 tomatoes, diced 1/2 cup dry white wine 2 tablespoons tomato paste or concentrate 42 grams (3 tablespoons) unsalted butter, cut up reserved pasta water (optional) 75 grams (2.5 oz) Parmesan cheese, finely grated a handful of flat-leaf parsley, finely chopped 200 grams (less than 1/2 pound) prosciutto, preferably Parma or San Daniele, at room temerature Preparation In a large pot, bring 1.8 L (8 cups) of cold water to a boil. When it boils, add salt and pasta. Cook according to package instructions, stirring often to loosen up the sticky strands. Drain the cooked spaghetti, but save about 1 cup of the pasta water. Set aside. Wipe clean the same pot and set over medium heat with olive oil. When oil is hot, lower heat to medium-low and sauté garlic and shallots until fragrant, about 1 minute. Increase heat to medium again, add olives, and cook for 1 minute. Add the diced tomatoes and cook until soft, about 1 to 2 minutes. Add the wine and stir until the alcohol has evaporated, about 2 to 3 minutes. Stir in tomato paste and butter until dissolved. Put the pasta back in the pot and gently mix until each strand is coated in the sauce. Add reserved pasta water if the sauce seems too dry. Toss with Parmesan cheese and sprinkle with chopped parsley. Serve on warmed plates and garnish with prosciutto slices.

Parmesan Pork chops 4 boneless pork chops 1 T. olive oil 1 C. parmesan cheese (I used Kraft) 1 C. Italian bread crumbs 1 tsp. pepper 1 tsp. garlic powder. Dip in olive oil and coat with mixture. Line pan with foil and spray. Bake 350 degrees for 40-45 min.
