Egg Muffins (17 Day Diet Approved) | 16 Egg Whites 6 Eggs 1 Bell Pepper, sliced 2 cup Mushrooms, sliced 4 cups Spinach Mix egg whites & eggs together. Saute veg for a few minutes then put in cupcake pan. Spoon egg mixture on top. 350 degrees for 30 minutes.

Made these once. I like the idea but I think this recipe was flawed. I added seasonings (none listed in original recipe), chopped vegetables instead of slicing, etc., but in the final result the texture was off. Mine came out rubbery. Think 16 egg whites was way off base as I was left with too much egg mixture for the muffin pan!
