Mark loves coconut ice cream, but I love my paleo trail mix with pecans walnuts almonds cashews and dried mango, cocnut, raisins, cranberries, apricots, cherries and beef jerky! YUM!

Creamy Mustard Chicken: (serves 3-4) 1 lb chicken thighs 1/3 can coconut milk (the thicker the better) 1-2 tbsp dijon mustard (to your taste) 1 small sweet onion thinly sliced 1/2 tbsp dried tarragon 1 tbsp Coconut oil melted salt and pepper to taste. Cover tray with aluminum foil and bake in the oven at 350 for 30-50 min.  Check and turn halfway through.
