Syrian Za'atar--a delightful blend of dried herbs, sesame seeds, sumac, & usually salt. Many variations: Israeli often contains dill weed; Jordanian more sumac, making it redder; & Lebanese may contain orange zest. Typically used as a table condiment, like pepper. Add to oatmeal (for savory flavor) or eggs, mix with olive oil for a dip, sprinkle on bread before baking or season vegetables. Makes an excellent rub for chicken, lamb & seafood; pairs well with cauliflower & potatoes.
