Put pork roast in slow cooker with onions a can of enchillada sauce. Slow cook for 7 hrs. Remove roast and shred (a cake mixer is fast). Heat corn tortillas or flour, roll with meat and place in rows in a baking dish. Cover with sauce and top with cheese. Bake until cheese is melted. Serve with rice and beans and salsa. Enjoy!
