Sweet Chili Tofu with Steamed Kale & Coconut Quinoa: Love, Love, Love and so does my six year old! I simplified the quinoa by cooking it first in pressure cooker & then reheated it at dinnertime on the stove top with a little coconut milk. Next time I will put the kale in the same "sauce" as the tofu....I think it would be much better that way. This tofu & quinoa are keepers!
Pretty in Pink smoothie (watermelon, banana and frozen strawberries) (written by Oh She Glows)....addicting:) Very light and refreshing. Not too sweet, but just sweet enough. Very simple to make. My six year old loves it!

fantastic!!! I used gardein chick'n (vegan) and added some chopped spinach and peas instead of broccoli. Next time I would like to use less butter and keep the vegan cheese to 1 cup (like I did today). I added frozen corn kernels (along with the peas & spinach) and it gave it a very nice unexpected sweetness!
Chickpea Cashew Coconut Curry - This is a keeper for us! Even my 6 year old loved it. Loved the lime & cilantro added to a tradtional curry:) Great over brown rice. Had red beets on the side. However, mine was much thicker than that pictured above...but I added a few too many cashews:( We loved it anyway.
Chickpea "not-so tuna" Salad sandwich. I added chopped jalapeno to the mix along with green pepper Instead of celery. A little siracha sauce on top and wrapped up in chard. YUMMO! A staple lunch recipe!
Spaghetti Pie: This is awesome! I left out the "meat crumbles" and wine, but otherwise followed the directions. Used Buckwheat noodles which added a rich deeper layer of flavor. Used Daiya cheese to top it off. Fantastic.

Coconut Banana Bread by Fat Girl Trapped in a Skinny Body....I loved this banana bread. Next time I will try to either use coconut oil instead of veg oil OR I can sub applesauce for the oil. Maybe try less sugar and add some cinnamoin? Maybe honey? Overall, fantastic!
