Black Bean Salad - Changed this recipe up a bit… ok a good bit. Black Beans, Diced Onions, Sliced Cherry Tomatoes, diced avocado. Dressing: Juice of 1 Lemon, 1 Lime, Drizzle EVOO, Drizzle Honey to balance, Garlic Salt, Pepper, Diced Cilantro. YUM!!

Mexican Tinga Tostadas - this is now one of my favorites. I added garlic and used a whole can of chipotles. The sour cream and feta take a lot of the heat away. Next time I'm going to half the recipe because this made way too much for us.
