Cream Cheese Raspberry Thumbprints
5-Ingredient Raspberry Cheesecake Thumbprint Cookies 4 ounces cream cheese, softened 8 tablespoons salted butter, at room temperature 1/2 cup + 2 tablespoons sugar 1 cup + 2 tablespoons flour 1/4 cup raspberry preserves Instructions In the body of a stand mixer fitted with a paddle attachment, beat cream cheese and butter until light and fluffy, scraping down the sides as needed. Add the sugar and beat well. Add in flour, a small bit at a time, beating in on low speed, just until incorporated. Cover bowl with plastic wrap and place in the refrigerator for at least 45 minutes, and up to 2 hours. 30 minutes prior to baking, preheat oven to 350 degrees (F). Line a large baking sheet with parchment paper. Using a cookie scoop, scoop out 2 tablespoon sized balls of dough, roll them into rounds, and place them on the cookie sheet. Lightly press your thumb in the center of each round. Fill each indentation with a 1/2 teaspoon of jam. Place pan in the oven to bake for 12-13 minutes, or until *just golden at the edges. They will still be very soft when you remove them from the oven - that's a good thing! Cool on the baking sheet for 10 full minutes, then very carefully transfer to a cooling rack to cool completely.

Red Velvet Thumbprints Prep Time 45 min Total Time 1 hr 15 min Servings 42 1 cup butter, softened 1 cup sugar 1 egg 4 teaspoons red food color 1 teaspoon vanilla 2 1/2 cups Gold Medal™ all-purpose flour 3 tablespoons unsweetened baking cocoa 1/4 teaspoon salt 1 bag (11 oz) white vanilla baking chips (about 2 cups) Directions Heat oven to 350°F. Line cookie sheet with cooking parchment paper. In large bowl, beat butter and sugar with electric mixer on medium speed about 2 minutes or until creamy. Stir in egg, food coloring and vanilla until well blended. On low speed, beat in flour, cocoa and salt until blended. Shape dough into 1-inch balls. On cookie sheets, place balls 2 inches apart. Press thumb into center of each cookie to make indentation, but do not press all the way to the cookie sheet. Bake 12 minutes or until set. Cool 2 minutes; quickly remake indentations with end of wooden spoon, if necessary. Remove from cookie sheet to cooling rack. Cool completely, about 10 minutes. In small microwavable bowl, microwave white baking chips uncovered on High 30 to 50 seconds, stirring once, until softened and chips can be stirred smooth. Spoon melted chips into resealable food-storage plastic bag; seal bag. Cut off tiny corner of bag. Twist bag above melted chips. Squeeze bag to fill each thumbprint cookie. Let stand until set.

Ultimate Chocolate Chip Cookies YIELD: About 24 large cookies ingredients: 1 1/2 cups (6.6 ounces) all-purpose flour 1 1/4 cups (5.6 ounces) bread flour 1 teaspoon baking soda 1 teaspoon baking powder 1 teaspoon fine sea salt 2 sticks unsalted butter, at room temperature 1/2 cup granulated sugar 1 1/4 cups packed brown sugar 2 teaspoons vanilla 2 large eggs plus 1 egg yolk, at room temperature 2 cups semi sweet chocolate chips directions: Preheat oven to 350ºF. Line baking sheets with nonstick baking mats or parchment paper. In a medium bowl combine the flour, baking soda, baking powder, and salt. In the bowl of an electric mixer beat the butter, granulated sugar, and brown sugar until creamy, about 2 minutes. Add the eggs, one at a time, beating well after each addition. Add the vanilla Gradually beat in the flour mixture. Stir in the chocolate chips. Wrap dough in plastic wrap and refrigerate for at least 24 hours but no more than 72 hours. Let dough sit at room temperature just until it is soft enough to scoop. Divide the dough into 3-tablespoon sized balls and drop onto prepared baking sheets.
