Cook sweet potato on medium high heat in olive oil. Mix up eggs in bowl, add coconut cream, tapatio and garlic powder. Fluff eggs with fork. Move sweet potatoes aside and scramble eggs in middle of pan. Incorporate ribbons when almost done. Salt + pepper that shit. Put in bowl and eat.

Spicy sweet potato and scrambled eggs. 2 eggs, 2 handfuls of sweet potato ribbons from TJs, Dollop of coconut cream, garlic powder, salt, pepper, tapatio, water. Cook sweet potato on medium high heat in olive oil. Mix up eggs in bowl, add coconut cream, tapatio and garlic powder. Fluff eggs with fork. Move sweet potatoes aside and scramble eggs in middle of pan. Incorporate ribbons when almost done. Salt + pepper that shit. Put in bowl and eat.
