I need to grow these this year. They thrive like weeds. *Jerusalem artichokes are sweet and almost garlicky and mushroomy and gorgeous. You can scrub and roast them whole like mini jacket potatoes and split them open, drizzled with a little chilli oil. You can even use them in a salad with smoky bacon. A Jerusalem artichoke's best friends are sage, thyme, butter, bacon, bay, cream, breadcrumbs, cheese and anything smoked.

Organic Weed Killer Spray. 1/2 gallon of Apple Cider Vinegar (I use white, cheaper) 1/4 c table salt 1/2 tsp Dawn liquid dish soap Mix and pour into a spray bottle Spray weeds thoroughly. It makes 1/2 gallon for around $6.40 It worked better than Round Up & killed the weeds on first application. The Dawn dish soap strips the weed of it’s protective oils so the vinegar can work with deadly force. Safe to use on a yard used by pets.
