This is our favorite way to eat broccoli of all time! My husband says he would rather eat this than fries. I put a few Tbsp of olive oil in a ziploc with some salt and pepper and the broccoli and shake. Then spread on a cookie sheet and spread minced garlic over it and roast at 425 deg F for 20-25 minutes.

Mini Pineapple Upside Down Cakes Recipe Cake Ingredients: 2 eggs 2/3 C white sugar 4 Tbsp pineapple juice 2/3 C all purpose flour 1 tsp baking powder 1/4 tsp salt Topping: 1/4 cup butter (1/2 stick or 4 Tbsp) 2/3 C brown sugar 1-can pineapple rings 6-maraschino cherries Preheat oven to 350 degrees. Spray your muffin tins with non-stick cooking spray. BAKE TIME 10-15 min. In a mixing bowl, add eggs, white sugar, and pineapple juice. Beat for 2 minutes. In a separate bowl, sift together the flour, baking powder, and salt. Add to the wet ingredients and turn mixer back on for 2 minutes. In a small sauce pan, melt the butter and add the brown sugar. Stir on low heat for one minute. Spoon a layer of the warm brown sugar mixture into the bottom of each muffin tin then place a pineapple ring on top. Add a cherry in the middle of each pineapple. Pour cake mixture over to fill muffin tin 3/4 of the way full. If you are using regular muffin tins, you will need to cut down the rings to fit or just use pineapple tidbits

Pineapple slice, cherry, and cupcake batter 9/11/12 not 100% sure if i will make them again. they tasted GREAT but I am so used to regular pineapple upside cake. the downside to this is the brown sugar stayed in the pan mostly but the stuff that did come out dripped off.

Banana pudding From scratch- SUPER EASY 1/3 Cup Sugar 1 Tbsp. Cornstarch 1/4 tsp. Nutmeg 1/8 tsp. Salt 1 1/2 Cups Half and Half 2 Egg Yolks 1 Tbsp. Unsalted Butter 2 tsp. Vanilla 3-4 Bananas, sliced 24 Nilla wafers, coarsely crushed Whipped Cream, for serving Whisk together sugar, cornstarch, nutmeg and salt in a medium saucepan, then whisk in half and half and egg yolks. Place over medium heat and cook, whisking constantly, until pudding thickens and begins to boil, 5-8 minutes. Remove from heat and add butter and vanilla. Whisk until butter has melted. Transfer pudding to a bowl and refrigerate until cold, about 3 hours. In your preferred serving dish (I used individual parfait glasses. You could also use ramekins or even a casserole dish if serving a bigger crowd), create two sets of layers using the bananas, 1/3 of the pudding and Nilla wafers. Top with the remaining 1/3 of the pudding.

Mix everything together and let sit overnight for flavors to meld.-This was more like pico de gallo than salsa. Maybe more like salsa if blended or put in food processor?!
