Ingredients: 4 1/4 lbs. Salmon filets 2 tbsp. vegetable oil, divided 1 lemon 1tsp. salt 1/2 tsp. ground black pepper Rinse filets and remove loose scales. Pat dry and rub on 1 tbsp. oil. Squeeze lemon on the flesh side and season. Heat skillet at medium-high heat and add 1 tbsp. of oil. Place fillets in the pan flesh side down. Cook for 3 minutes before flipping. Cook for 2 minutes. Remove pan from heat and let rest for 1 minute. When cool enough to touch, remove skin and serve.
