Double the sauce portion and serve over rice.

Crockpot Cashew Chicken.. Ingredients: 2 lbs boneless, skinless chicken thigh tenders or chicken breast tenders 1/4 cup all purpose flour 1/2 tsp black pepper 1 Tbsp canola oil 1/4 cup soy sauce 2 Tbsp rice wine vinegar 2 Tbsp ketchup 1 Tbsp brown sugar 1 garlic clove, minced 1/2 tsp grated fresh ginger 1/4 tsp red pepper flakes 1/2 cup cashews ( I love cashews so I would add more ) http://www.daydreamkitchen.com/2012/09/crock-pot-cashew-chicken/ Directions: Combine flour and pepper in large Ziploc bag. Add chicken. Shake to coat with flour mixture. Heat oil in skillet over medium-high heat. Brown chicken about 2 minutes on each side. Place chicken in slow cooker. Grilled Margherita Sandwiches. So good. In fact, I will use olive oil on all my grilled sandwiches from now on. Tasted better and it's healthier. To hold the sandwiches together, I set a cast iron skilled on top of them on the griddle. Sort of like a panini maker!

Pan Fried Cinnamon Bananas ~ Ingredients 2 slightly overripe bananas 2 tablespoons sugar (you can substitute granulated Splenda, if you like) 1 teaspoon cinnamon ¼ teaspoon nutmeg Olive oil spray Instructions Slice the bananas into rounds, approximately ⅓ inch thick. In a small bowl, combine the sugar, cinnamon, and nutmeg. Set aside. Spray a large skillet with olive oil spray. Warm over medium heat. Add the banana rounds and cook for about 2-3 minutes. During the last minute of cooking on the first side, sprinkle about ½ of the cinnamon mixture over the banana rounds. Flip the rounds, sprinkle with the remaining cinnamon mixture, and cook about 2-3 more minutes, until the bananas are soft and warmed through.
