Egg and Cheese Breakfast Sandwiches

Last pinner said...I do this daily (: Perfectly cooked, shaped eggs - and you can bake a whole lot simultaneously: Just grab a muffin tin and and very lightly oil each spot in the tin with either butter or spray oil. Then crack an egg in each muffin area! Stick these in a 350 degree oven for about 15-20 minutes. Put on a English muffin, with shredded cheese. Can be frozen and reheated. Brilliant!

Pinner said, "One gallon of milk will yield about 1 pound of cheese. (I paid $2.39 for the milk, so 1 pound of fresh mozzarella was less than $2.50). Homemade Mozzarella Cheese is one of the easiest cheeses to make, it only takes 30 minutes and the taste can't be beat!"

I sort of combined this with the other method. I think adding the baking soda doesn't make much of a difference, honestly, but the double ice water bath with the pin pricking of the other method seemed to work very well.

Im amazed how many people dont know this. Cook bacon in the oven. Cover cookie sheet with tinfoil first. We do 375 for about 20 min instead of 400 for ten because the lower and slower the more fat renders out. Then all the bacon is done at the same time, meanwhile you were free to make the rest of breakfast.
