Serves 6-8 ½ cup unsalted butter, room temperature 2 tsp. lemon zest or more — zest from 1 large lemon 3/4 cup + 2 tablespoons + 1 tablespoon sugar 1 egg, room temperature 1 tsp. vanilla 2 cups flour (set aside 1/4 cup of this to toss with the blueberries) 2 tsp. baking powder 1 tsp. kosher salt 2 cups fresh blueberries ½ cup buttermilk

Meanwhile, toss the blueberries with ¼ cup of flour, then whisk together the remaining flour, baking powder and salt. 3. Add the flour mixture to the batter a little at a time, alternating with the buttermilk. Fold in the blueberries. 4. Grease a 9-inch square baking pan (or something similar) with butter or coat with non-stick spray. Spread batter into pan. Sprinkle batter with remaining tablespoon of sugar. Bake for 35 minutes. Check with a toothpick for doneness. If necessary, return pan to oven for a couple of more minutes. (Note: Baking for as long as 10 minutes more might be necessary.) Let cool at least 15 minutes before serving.

How To Make Low Carb Sausage Biscuits: Like I said, I started with my base low carb dough recipe and made a few variations. I made a “half batch” too, since I was eating alone, which came out to 10 biscuits at approximately 1.25 net carbs for each biscuit. Ingredients: – 1/2 cup Bob’s Red Mill Almond Meal/Flour – 2 Large Eggs – 1 TBSP Real Butter, Melted – 8oz raw Jimmy Dean Sausage (half a tube) – 1/2 cup shredded Parmesan cheese – 1/2 cup shredded Colby Jack cheese I should note here that I used a “dry measure” for all ingredients. I melted the butter in the microwave, stirred the eggs together, and combined all ingredients in a large bowl. Note: Now is a good time to preheat your oven to 350 degrees and place parchment paper on a baking sheet. Your hands will be too icky in a second. :P I mixed all the ingredients together with my hands, similar to the way you would make a meatloaf: by kneading all the ingredients through your fingers until the ingredients are evenly mixed. Yes it’s cold and squishy, lol. Next I “pattied” out the dough onto the parchment paper by grabbing a palm size of the mixture and shaping it with my hands: low carb bread dough This recipe made 10 low carb sausage biscuits. I baked them at 350 degrees until they were done, and had a nice browned crisp texture on the outside. They may take 10-20 minutes to cook, or a little longer. Just keep an eye on them, flip them halfway through if you want to get an even brown, and take them out when they are done and browned to your liking. Here’s a close up of the texture. As you can see it’s very bread-like: low carb bread texture with almond meal To give you an idea of the size of these biscuits: size Obviously you can make them as large or small as you please, but you’ll want to adjust your servings when you add the recipe into MyFitnessPal to track your meals. Here’s how mine came out for three biscuits: low carb macros 4 net carbs for 3 biscuits, and 75/22/3 – perfect macros! As you can see they are very low carb, high fat, and a good source of protein. Great for a quick, easy meal or snack on the low carb diet! They’re hearty, and very filling. They are also gluten free. ;-) I tried them previously with crumbled sausage I had already cooked. I used the same recipe as above, except I used 1 cup (dry measure) of cooked sausage crumbles and 1 cup of shredded Parmesan cheese (instead of half Colby, half Parmesan). They turned out very nice too: low carb biscuit recipe They’re great as is, or you can enjoy them with a dab of cream cheese. I always liked “moosetracks” (sausage biscuits with jelly), so I put just a little smear of Sugar Free Mountain Berry Preserves on mine sometimes. Delicious! :D I hope you enjoy this low carb recipe!
