Sounds heavenly. This is a canning recipe, but it only makes 4 pints - which will disappear fast!

crock pot chicken tacos Crockpot Chicken Tacos Recipe from Tasty Kitchen 1 envelope Taco Seasoning 6 pieces Boneless, Skinless Chicken Breasts 1 jar Salsa (16 oz) Dump everything into a crock pot and give it a little stir to blend the seasoning with the salsa. Cook on high for 4 to 6 hours or on low for 6 to 8 hours. When done, the chicken should shred easily when stirred with a fork. For tacos, serve the chicken with soft flour tortillas, lettuce, shredded cheese and sour cream. This is very versatile and can be used for enchiladas, nachos, tostadas, etc. Any leftover chicken can then be used for tortilla soup (make it the next day or freeze the chicken to use at a later time).

For a little extra kick, add a few chipotles with adobe sauce (and a few heaping Tbsp. of brown sugar). Delicious served with coleslaw on either garlic buttered Texas toast or garlic butter toasted French rolls.

Skinny Baked Mozzarella Sticks Part-skim mozzarella sticks coated with crispy seasoned breadcrumbs and baked until hot and golden. Serve them with my quick marinara sauceand you have yourself an appetizer everyone will love. Hot mozzarella sticks, I can't think of a more popular finger food with both kids and adults alike! I mean, what's not to like? Baking them as opposed to frying and using part skim cheese doesn't effect how good these are. The cheese still melts, see for yourself! Of course, you'll want to serve them hot right out of the oven, because like any cheese, as they cool they harden. It actually took me several attempts to get these perfect. I played around with different brands of light string cheese to see which yielded the best results. The winner was Sargento part-skim, low-sodium. Although it's not the cheese with the least amount of fat compared to some other brands, it had the best flavor and wasn't as salty as I found some brands to be. These are freezer friendly, in fact these MUST be frozen before you bake them or you will have one big cheesy mess in your oven! The good news is you can bread them all ahead of time then place them on tray with wax paper and freeze them until you are ready to bake. Make the marinara saucea day ahead as well. Happy Superbowl Sunday!! Skinny Baked Mozzarella Sticks Skinnytaste.com Servings:12 • Serving Size:2 pieces • Old Points: 1 pts • Points+: 2 pts* Calories:86.8* • Fat: 4.8 g • Protein:7.4 g • Carb:3.5 g • Fiber: 0.2 g • Sugar:0.2 Sodium:168.6 Ingredients: 12 sticks part-skim, reduced sodium mozzarella string cheese (Sargento) 1 large egg, beaten 2 tbsp flour 5 tbsp Italian seasoned breadcrumbs 5 tbsp panko crumbs 2 tsp parmesan cheese 1 tbsp dried parsley olive oil cooking spray (I used my misto) Directions: Cutcheese in half to give you 24 pieces. Linea baking sheet with aluminum foil and lightly spraywith oil. Place frozen cheese sticks on baking sheet. Spraythe tops of the mozzarella sticks with a little more oil and bakein the bottom third of your oven until crisp, about 4 to 5 minutes. Turnand bakean additional 4 - 5 minutes watching them closely so they don't melt. Makes 24 pieces. * There will be extra crumbs and flour after breading, I've deducted them from the nutritional info.

Hawaiian Chicken Kebabs with Grilled Pineapple #recipe
Hawaiian Grilled Chicken & Pineapple This simple grilled Hawaiian Chicken recipe combines pineapple, ginger, sesame and a hint of garlic into delicious kebabs making a Fabulous light, yet filling dish during hot weather. It goes wonderfully with steamed jasmine rice. * 3 tablespoons soy sauce * 3 tablespoons brown sugar * 2 tablespoons Rice Vinegar or sherry * 1 tablespoon sesame oil * 1/4 teaspoon ground ginger * 1/4 teaspoon garlic powder * 1 1/2 pounds skinless, boneless chicken breast halves - cut into 2 inch pieces * Fresh Pineapple cut into slices * 1/2 c. fresh pineapple, chopped into small pieces, juice reserved * skewers Basting Sauce * 1 T. Cornstarch * 1/4 c. cold water * Leftover Marinade In a small bowl mix the soy sauce, brown sugar, rice vinegar, sesame oil, ginger, and garlic powder. In a Marinating dish, (if you don't have one you can place them in a 9x13 casserole dish, place the chicken pieces and several pineapple slices that have been chopped into small pieces into the dish, pour over the marinade, stir until well coated. Cover, and marinate in the refrigerator for 2 hours. If using a marinating dish, flip it over after an hour. I don't recommend marinating overnight if you're using fresh pineapple as the enzymes in the pineapple will break down the chicken and change its texture. Preheat grill to medium-high heat. Soak 10-12 Wooden Skewers in a tall glass of water. This prevents the skewers from burning during cooking. Thread the chicken pieces onto the skewers. Now, you're left with some tasty leftover marinade. If you'd like to baste your chicken during cooking, you can make a light basting sauce. In a small sauce pan add the leftover marinade (with pineapple pieces) over medium heat, stirring occasionally. While it is heating in a small bowl mix cornstarch and COLD water (Cornstarch only thickens once!), once your marinade is bubbling hot, add the cornstarch/water mix. Bring to a boil until thickened and no longer cloudy (this means the cornstarch is thoroughly incorporated into your sauce). Lightly oil the grill grate. Grill the chicken kebabs 8-10 minutes, turning occasionally, or until chicken juices run clear. During the last 5 minutes of cooking, add the pineapple slices, grill lightly on both sides. Alternatively, you could use canned pineapple chunks and make Hawaiian Chicken Kebabs by alternating pieces of chicken and pieces of pineapple.
