Restoring Highlawn

Restoring Highlawn / By the early 1980s, the original structure was abandoned and had fallen in severe disrepair. It wasn’t until the Knowles family entered in a partnership with Essex County and undertook a massive redevelopment project, with sensitivity to the historical value of the structure, that the fate of the New Jersey landmark changed. Today, Highlawn is a place of celebration for generations of area families and has become a well-recognized destination for inspired cuisine in a truly unique setting.

From Our Farm / Pleasantdale Farm, located on the grounds of Pleasantdale Chateau, another venue owned by the Knowles family, and just a mile down the road, produces a variety of herbs, vegetables and fruits each year – and is used in the kitchens of our restaurants. More than 40 varieties of tomatoes and multiple varieties of squash, winter squash, peppers, bell peppers, eggplants, herbs, radish, beans and leafy greens are grown from seed and handpicked by the chef and his staff.

History of Highlawn

History of Highlawn / In 1909, an open masonry shelter affixed with a series of arches dubbed “the casino” was built on the crest of the Reservation and to this day serves as the bones of the structure that is Highlawn Pavilion.
The term "casino" refers to an Italian style county dwelling or summer house. After years of neglect, the casino was acquired by the Knowles family whose extensive renovation resulted in the creation of the restaurant known today as Highlawn Pavilion.

Eagle Rock Reservation / Home to Highlawn Pavilion, Eagle Rock Reservation is 408 acres of hills, streams, and valleys located on the borders of West Orange, Verona, and Montclair, New Jersey.

Eagle Rock Reservation was designed in the late 1800's by, among others, the Olmsted Brothers, the same firm that designed Central Park in Manhattan and Branch Brook Park in Newark. Besides rustic beauty, the Reservation enjoys an unrivaled view of the New York City skyline.

Executive Chef Mitchell Altholz / Mitchell Altholz spent seven years in France, mastering the art of gastronomy at such fine restaurants as Maxim’s (Paris), Paul Bocuse (Lyon), Le Saprien (Sauternes) and L’Iboga (Bordeaux). During his tenure, Chef Mitchell was the only American in Bordeaux to hold the position of Chef de Cuisine. Chef Mitchell’s New York credits include Sous Chef at Maxim’s, where he had the honor of working with many renowned guest chefs including Jacques Pepin and Mitchell Rostang.
