This is our favorite way to eat broccoli of all time! My husband says he would rather eat this than fries. I put a few Tbsp of olive oil in a ziploc with some salt and pepper and the broccoli and shake. Then spread on a cookie sheet and spread minced garlic over it and roast at 425 deg F for 20-25 minutes.
Roasted Green Beans with Mushrooms, Balsamic, and Parmesan ~ 8 oz mushrooms, sliced in 1/2" slices, 1 lb fresh green beans, preferably thin French style beans, 1 1/2 TBsp olive oil, 1 TBsp balsamic vinegar, salt and fresh ground black pepper to taste, 2 TBsp finely grated parmesan cheese.
I am down to my last week of pregnancy. This last little part has seemed longer than the entire nine months! I just can't wait for this little girl to get here. I got her crib today for her room...substitute mayo for greek yogurt
