30-minute Chickpea Cashew Curry. This was okay, not outstanding. The stuff-to-liquid ration was a bit off - I like a little more sauce in my curry. Also adding the spinach gave the curry a really blah, dishwater color. I added tumeric to make it look more appetizing.
