Banana Oatmeal Breakfast Muffins 2.5 cups old fashioned oats 1 cup plain low fat greek yogurt (or sour cream?) 2 eggs 1/2 cup honey 2 tsp baking powder 1 tsp baking soda 2 TBSP ground flax seed 1 tsp vanilla 2 ripe bananas 350 F oven Process oats into flour. Add all ingredients and mix until smooth. Fold in chocolate chips or walnuts or both. Bake 18-20 minutes or until toothpick is clean.

Directions: 375 F oven. Use muffin cups or cooking spray. Mix ingredients together. Pour into 15 muffin cups. Bake 20-25 minutes. They will start to get brown around the edges. .
