(1) Blend all ingredients together for a few min. (2) Pour mixture into a pot and simmer for 15 min or so – don’t let it boil! (3) Then chill mixture in fridge overnight. (4) Serve Christmas morning and pour into nice cups and sprinkle with extra cinnamon! ** Makes 4 servings, each one about 145 cals with 7g of protein
Sweet Potato Casserole. It was completely gone! It was really good. I used 6 large potatoes, so I did alter it a bit. I doubled the orange juice and added two more tablespoons of butter (it was too dry), and one more tablespoon of brown sugar. Instead of mashing it, I used a handheld mixer to remove any clumps. It was quick, easy, and definitely yummy!
