As a child, my elementary school served this very creamy and mild Cream of Tomato Soup that could perhaps be described as... FROTHY? Turns out, it had a bit of Baking Soda in it for that foamy texture. TIPS: I cut back the sugar to about a teaspoon instead of 2 TBS. And I used regular milk instead of Coffee Creamer. Less fat & sugar. The kids (and Hubby) gobbled this up at my house. Great with Grilled Cheese, of course. ~~ Houston Foodlovers Book Club

My friend Carol served me this soup one blustery evening following a traumatizing flat tire incident that left me soaking wet and miserable... I was so grateful. It was warm and so good and only took about 15 minutes to make - just throw together 8 cans of stuff like beans, corn, broth, chicken breast, and a pkg. of Taco seasoning, and it's ready. Yay. I don't know about you, but I have liked every single recipe of Emeril's I've ever tried. His Chicken and Rice Soup, with a bag of Baby Spinach stirred in right at the end, is just delicious. It's easy to make, doesn't take a ton of ingredients, and is great with a French Baguette. Or a pan of Cornbread. You don't really taste it as much as you just kind of feel it in the back of your throat... delicious. TIP: Adapt this for vegetarians by using vegetable broth, and leaving out the chicken.
