This link is actually for breakfast sandwiches (which you can freeze, who knew?!) but i also love the idea to cook eggs in muffin tins if you have a lot of people to feed and don't want to slave over a hot stove the whole time. Bought some quality muffin pans, the only way to do this, the cheap dollar store ones are impossible to clean. Super easy, I combined with Canadian bacon and cheese on an English muffin, over 2 weeks worth of breakfast sandwiches in the freezer.
