This is my favorite way to extend the shelf life of some tomatoes that are looking kinda rough and wrinkly.

Recipe:
Cherry Tomatoes (whatever you have on hand)
Olive Oil - I use @getgraza 
Garlic Cloves
Salt

Take your struggling tomatoes and toss them into the smallest pan that allows them to sit in an even layer. Pour in enough olive oil to cover half way*, add an optional big pinch of salt,  then cook in an oven at 300 degrees until they’ve lost a decent amount of their water content and are fully cooked, stirring occasionally. 

Store them in a jar submerged in their oil.

*Some people prefer to cover them completely but I like a little bit of that browning (also filling the pan all the way uses SO much olive oil and I ain’t about that).
