Two Ingredient Pancakes (Bananas & Eggs) (Serves 1) ~ 2 Eggs • 1 very ripe Banana ~ Can add: ¼t Vanilla • ⅛t Cinnamon ~ Mash banana til smooth, set aside. Beat eggs, add banana. Add vanilla & cinnamon, if desired. Spray pan generously. Start w a lower heat since they can burn easily. Then cook on med heat. Using a 1T measuring spoon, scoop batter into pan. Allow the pancakes to cook through. Respray the pan between each set of pancakes. Each pancake takes a couple of minutes to cook.
