Over the past few years, meditation has evolved from an of-the-moment fad to a legitimate health craze, as research has linked the practice to everything from improved cardiovascular health to cogniti.
Pretty amazing lunch of leftovers today: #vegan #coconut encrusted french toast (recipe at www.tcnm.ca blog) with vegan whipcream made with coconut milk, cinnamon infused maple syrup and bacon Snacks of fruit salad (apples, plums and raspberries) and rainbow carrots and cucumbers. Lucky girl!
A quick homemade pizza on pita with snacks of cherry tomatoes and fruit salad of plums, oranges, golden raspberries, raspberries and pomegranates. We are not fans of fruit juice because of the concentrated sugar so we've negotiated one juice box a week (on Fridays). Esmé doesn't even drink it most days but it makes her happy to have it. Happy Friday!
Simple lunch of leftovers: white fish and broccoli. Snacks of prune plums, pomegranates and trail mix of pumpkin seeds, sunflower seeds, goji berries, dried apricots and coconut flakes. I always have homemade trail mix in my purse, car and in little baggies in our pantry so we can grab and go. Eating healthy is easier if you're organized!
Super quick healthy lunch for the big girl: fresh tortilla with organic egg and cheddar, roasted butternut squash, Mexican-style organic corn and fruit salad of prune plums, oranges, pomegranates and raspberries.
A simple lunch of leftovers with a simple message: bee kind. I remember wanting so badly to be in Girl Guides when I was young but my parents just couldn't afford it (refugees with 6 kids) so they signed me up for Busy Bees instead. It was a small group that met in a church basement. They gave us stickers with messages like this: Bee kind. Bee helpful. Bee thankful. I loved those stickers. So simple and so sweet.
A thermos of warm sweet potato and #apple soup along with raw #celery, cherry tomatoes and steamed green beans, hummus, apples, oranges and kiwis make for a nourishing lunch. When I don't have time to make hummus, our go-to is the roasted garlic and onion one from Sunflower Kitchen. Yummy!
Surprisingly, this organic durum wheat pasta has 11 g of protein and 8 g of fiber in a serving. It's a great option if your kids tolerate gluten. The brand is Felicetti and available everywhere. I paired it with roasted brusselsprouts, olives and parmigianoreggiano. Snacks of celery (yes!), cherrytomatoes, oranges, kiwis and pomegranates. Keep warm everyone!
