Minestrone+Soup - Wow, so, so good! What a perfect fall/winter meal. I did make some changes from the recipe. I used sweet Italian sausage, rather then spicy. Instead of 4 cups water - I used 2 cups water, and 2 cups low sodium vegetable broth. I used fresh parsley, instead of dried. I tossed in fresh thyme. I put in 3/4 a cup of cannelloni beans. Will make again for certain. Now I'm on a soup kick!
