Crockpot Baked Potato Soup - This was so simple and really good! To make the soup a bit richer and thicker, I only use one 32 oz. Carton of broth and I added 2 Tbl. Butter and 1 cup sharp cheddar. I served each bowl with additional cheese, crumbled bacon and chopped green onions. A hint: cut cream cheese into small cubes before adding it to the soup, it will melt much faster.
