Get it all the way to the white-ish part) Set hollowed orange halves, open side up, in something secure so they don't move around when the jello is in them (I used muffin pans; easy transportation, great to keep them where you want 'em =D) Prepare jello with 1/3 less water needed for recipe. Pour into orange halves Set in fridge and chill completely Take out of fridge, flip over onto cutting board (open side down so it's flat on the surface). Cut into slices, either halves again (1/4 of the whole) or into 3 slices. Make sure to use a really good serrated knife, and don't be really forceful with them, it's jello after all! =) And voila! You have jello orange slices! Option: I haven't done this personally, but I plan on trying this at some point.... Jello SHOT Slices! =D Oh yea, what a party that would be! But I don't recommend having both at a gathering where there will be kids... imagine the mix ups that could happen

Stuffed Zucchini, - oh so pretty. But we weren't big fans. First I don't like thyme, but I put it in anyways - big mistake. My husband & I both agreed the topping was yummy (minus thyme) but the texture of the zucchini boat was not to my liking. Maybe grill the boat first, then add topping??

Simple ingredients, simple techniques, maximum flavor. But I guess you know that by now. Especially when you hand me a recipe that doubles as an appetizer or side dish, you just reel me in. Stuffed zucchinis are so versatile. It creates an endless amount of possibilities because almost anything goes with the smooth and silky flavor (and texture) of the zucchinis. Preparing them can be tedious for me (note how I’m saying for me?) though. Boiling them first, stuffing them and then in the oven. Too time consuming. It’s how I learned it a long time ago and it seems I got stuck in my ways. So lately I’ve been wondering if there are easier and faster ways to prepare them. Now the blog name doesn’t say ‘Dutch Girl Cooking’ for nothing, so I trodded back to my kitchen, slaved over a hot stove and can now safely say: Yes, there is an easier way! Now please, please, don’t tell me you’ve been doing it like this for 10 years straight! You’ll make me feel completely and utterly stupid! A little white lie, for my sake? Please? Ingredients: 1 tbsp sour cream 1/4 to 1/2 tsp salt 1/4 tsp curry powder 1/2 tomato 1 tsp thyme 2 zucchinis 1 onion cheese pepper Optional: bacon Directions: Preheat your oven to 400 (200C). Give the zucchini a good scrub. Slice them in half length-ways. You can trim the ends if you like. I never do, I kinda like how rustic it makes them look. Spoon out the guts. I love how that sounds, has to be the Halloween thing. Oh wait, we don’t celebrate Halloween here! Never mind. Just take it out (leave about 1/2 an inch in) until you end up with boat like shells. See the pink ‘bracelet’ I’m wearing? Yes, it’s (of course) linked to this posting. Now give the zucchini pulp a good chop, also chop a small onion and 1/2 a tomato while you’re at it. I’m only using half a tomato (more for color than flavor, really) otherwise things will become a teeny bit too fluid. Having everything gush out of your zucchini is not a pretty sight, trust me! Notice how I didn’t use garlic for a change? It’s the rebel in me. What can I say? I just don’t want to be predictable after all. Sautee the onions in one tbsp oil or butter. It’s ok for them to brown a little this time ’round. When the onions are almost done, add 1/4 tsp curry powder and cook everything for an additional 30 seconds. No longer or the curry powder will turn bitter. When they’re done, transfer them to a big bowl. Now this is completely optional. If you want to stick with a vegetable dish, fine, just leave the bacon out. I personally like the crunch and saltiness it gives, so I cook a few slices and let them drain on a paper towel. Now (in no particular order), add 1 tsp dried thyme, 1/4 to 1/2 tsp salt, 1 heaping tbsp sour cream, a good pinch of pepper, the zucchini pulp, the tomato and crumble the bacon in as well. Lightly butter a baking dish and put the zucchini boats in. You only see two of them in my photos because I’ll finish the rest tonight. They’re best served straight out of the oven. Afraid I’ll just have to sacrifice myself and eat both of them pretty soon, all for the sake of blogging, of course. It would be a shame if they’d go to waste, wouldn’t it? Grab a spoon and fill the shells with the mix. Sprinkle some aged cheese on top. Put them in a preheated oven, give them about 20 minutes and then turn on the grill until the top is golden brown. Sprinkle some coarsely chopped curly leaf parsley (the most underrated herb there is) on top and you’re done. Hello, my pretties! Oven Fried Pickles: 1 jar pickle slices; 2 eggs; 1/3 C. flour; 1 Tbsp Worcestershire; 1 tsp hot sauce; 1 tsp garlic powder; 1 tsp Cajun seasoning; 1 tsp pepper; 1 1/2 cups panko bread crumbs. __Turn on oven broiler. Whisk eggs & flour. Mix in Worcestershire, hot sauce, garlic, Cajun seas, & pepper. Place panko in shallow dish. Dunk pickle slices in egg mixture; dredge in panko. Place pickles on sprayed cooling rack set above a baking pan. Broil on middle oven rack abt 3 min on each side. Serve with Ranch dressing mixed with a dash of hot sauce.

Sweet Potato Oven Fries In my experience, the total cook time for these oven fries varies, depending on the size of the sweet potatoes and the thickness of the fries. Small or medium sized sweet potates may require less time. But at my grocery store, sweet potatoes range from medium-large to monstrous. The bigger the sweet potatoes, the more fries, and the longer they take to cook. Also, the potatoes have a tendency to stick to the pan so be sure to toss well with oil. 2 large sweet potatoes (about 2 pounds) 1.5 teaspoon salt 1 teaspoon chili powder ½ teaspoon smoked paprika ½ teaspoon sweet paprika ½ teaspoon black pepper, more to taste Pinch cinnamon 2 - 3 Tablespoons olive oil 1. Preheat oven to 450 degrees F. Line a rimmed baking sheet with foil for easier clean-up. 2. Cut each sweet potato in half cross-wise; then cut each half lengthwise into 3/8 inch wide (tombstone-shaped) slices. Finally cut lengthwise into 3/8 inch wide sticks or “fries.” 3. Put the sweet potato fries on the baking sheet. Sprinkle salt, chili powder, smoked paprika, sweet paprika, black pepper, and cinnamon evenly over the sweet potatoes. Pour on 2 to 3 Tablespoons of olive oil. Thoroughly stir the sweet potatoes, gently tossing them around to evenly coat with seasonings and oil. Be sure to coat all sides of the sweet potatoes with oil, as they tend to stick. Use additional oil as needed. 4. Spread sweet potatoes on the baking sheet, trying as much as possible for a single layer. Place in the oven and bake for 15 to 20 minutes or until sweet potatoes have started to brown. Use a spatula to carefully turn over sweet potatoes, if desired. (The potatoes at the edges of the baking sheet tend to brown faster, you may want to rearrange to correct for hot spots.) Bake for another 5 to 10 minutes or until browned to your liking... I recommend you keep a close eye on the sweet potatoes as they go from golden brown to dark brown quickly. 5. Remove from oven and cool for a few minutes. Serve with chili-lime sour cream and yogurt dipping sauce. Makes about 4 cups total or 5 (3/4-cup) servings. Chili Lime Sour Cream Yogurt Sauce ¼ cup sour cream ¼ cup yogurt 1 clove garlic, minced ¼ teaspoon salt ¼ teaspoon black pepper Juice from ½ a lime ¼ teaspoon chili powder ¼ teaspoon smoked paprika Combine ingredients in small bowl. Stir well. Taste and add more salt, lime juice, or spices to taste. Refrigerate till ready to serve.

Nutella Covered Frozen Bananas This Blog This Blog Monday, July 12, 2010 Nutella Covered Frozen Bananas I spent a semester abroad in Paris during the fall of my junior year, and many of my most potent memories revolve around the amazing food that the city of lights is so famous for. I can remember one night, my roommates Tyla, Mara, and I ventured out for a late night snack to a nearby crepe vendor in the 3rd arrondisement. We each treated ourselves to crepes with our favorite filling combintation -- nutella and bananas. When we arrived back at our doorstep, we were soon shocked to realize our keys wouldn't open the door and we were officially locked out -- just one of the many joys of living in such an old, yet beautiful, Parisian building. I can remember sitting on the floor, slouched against the door, cell phone glued to my ear calling locksmiths, all the while picking away at my delicious crepe. We eventually got in, although it cost us a pretty penny and many future headaches, but we all later agreed that nutella crepes were always worth it. I haven't attempted to make crepes yet, but Mara celebrated her birthday this past weekend, and since she is particularly fond of nutella (as in, we had to stop buying jars of it because she just couldn't control herself around the chocolate-hazelnut goodness), I knew these frozen treats would be perfect for her New York City rooftop dinner party. Here they are jazzed up for the party with decorative candles: Since I was staying at my friend's apartment for the weekend, I wanted an easy recipe that I could whip together without completely destroying her kitchen, and this certainly did the trick. With so many enticing fruit vendors on the corners in NYC, I had no problem finding ripe, cheap bananas and had brought with me from CT a jar of Nutella, some chocolate candy melts, lollipop sticks, and a few bags of toppings (coconut, walnuts, heath bar, and pretzels). This isn't even much of a recipe, more of a simple idea to work from in order to wow guests and please nutella-obsessed friends. Happy birthday Mara!! Nutella Covered Frozen Bananas Recipe adapted from Bell'ailmento 6 ripe, large bananas 1 small jar Nutella 1/2 cup dark chocolate candy melts Lollipop sticks Toppings of your choice - Slice bananas into fourths, discarding the ends - Place them vertically on a tinfoil-lined baking sheet, and insert a lollipop in each - Freeze bananas for at least 2 hours, ideally overnight, so they hold their form well during dipping - When bananas are frozen, melt the chocolate candy melts in a double boiler, adding the nutella towards the end - Dip each banana into the chocolate and roll immediately in toppings - Freeze for another hour or so until serving Recipe yields approximately 24 banana pops
