Pumpkin French Toast Bake - the perfect healthy fall breakfast. Ingredients: 3½ – 4½ cups 1-inch bread cubes (depending on type of bread), 7 large eggs, 2 cups milk (any kind)*, 1 tsp vanilla extract, 1½ tsp pumpkin pie spice, ¼ cup pumpkin BUTTER (or ½ cup pumpkin puree), *3-4 tablespoons brown sugar for topping, nuts, like pecan or walnuts (optional). Instructions: Cut any kind of bread into 1-inch cubes – I recommend a crusty, whole grain variety, but sandwich bread will work, too. Just use enough slice to fill a lightly greased 9×13 baking dish quite full.In a large bowl, whisk together eggs, milk, vanilla, pumpkin butter and pie spice until well combined. Pour over bread and push down with a spoon or your hands until it’s all soaked and mostly covered. Cover with saran wrap or lid and refrigerate overnight.In the morning, preheat oven to 350 degrees, uncover and top with brown sugar, additional pumpkin pie spice and nuts (optional). Bake for 35-45 minutes or golden brown and no longer wet.Serve immediately with maple syrup, honey or agave nectar. Store leftovers in the refrigerator covered for up to a couple days.Notes* I HIGHLY recommend using pumpkin butter as it has a concentrated pumpkin flavor and is much sweeter than puree. But if using puree instead of butter, it’s important to compensate the flavor by adding a bit more puree, pumpkin pie spice, and a little agave nectar, brown sugar or maple syrup to the batter. Otherwise, it will lack that delicious fall, pumpkin flavor you’re going for. * I used 2%, but use skim or low-fat for a lighter recipe. This is NOT low carb, but for my family on Christmas morning. Slow Cooker Breakfast : 12 eggs, 32 oz bag of frozen o'brien style hash browns, defrosted and rinsed , 1 lb sausage, bacon or ham (or any combo you like), 1 med onion, diced, 1 bell pepper, diced (use whatever color you like best), 3/4 c 2% milk, 3/4 c sour cream, 1 tsp dry mustard, 1 tsp garlic powder, salt and pepper to taste, 2 c shredded cheddar cheese. Cooks 8 hours on low in a crock pot. Ready when they get up!

This time I just used regular.Salt and pepper16 oz. bag shredded cheddar cheese Directions:Spray crock pot and evenly spread hash browns at the bottom.Crack 12 eggs in a large bowl.Mix well (and slowly) using a whisk.Add the milk.Go ahead and sprinkle in the ground mustard. This might sound like a weird ingredient, but I've come to love (and use) this in most of my recipes.Add plenty of salt.......and lots of fresh pepper. Mix well and set aside.Cook the sausage on high heat, drain and set aside.Add sausage on top of hash browns.Is this enough cheese? Maybe? Probably. Throw the whole big bag in there.Mix it up well. Or good, depending on where you're from.Pour the egg mixture over everything in the crock pot. Using a wood spoon, even everything out so it's spread evenly.Turn the crock pot on low for 6-8 hours. If you sleep more than that and lack the discipline to get up just to turn off the crock pot (like myself), feel free to make this the day before and keep it on warm all night. That works really well in our house. Now go wash your face, watch some E!, and get in bed. Go ahead and close your eyes, and fall asleep. Because when you wake up and walk into the kitchen, you'll see this...Oh, my.What do we have here?A perfect recipe that reminds you that the day is worth living, that's what.Some fun variations of this recipe. Before cooking (during prep) you can add:chunks of sourdough bread diced chiles salsa diced green onions Serve hot with a glass of orange juice and a side of toast.

Best idea ever! 1can Pillsbury® Grands!® refrigerated cinnamon rolls with cream cheese icing1cup powdered sugar3tablespoons milk1teaspoon vanilla1Heat waffle maker; spray with cooking spray. Remove cinnamon rolls from can; set icing aside.2For each waffle, place 1 cinnamon roll in center of waffle maker; close. Bake 3 to 4 minutes or until waffle is thoroughly cooked and golden brown.3Meanwhile, in small bowl, stir together reserved icing, powdered sugar, milk and vanilla until glaze is smooth.4Serve glaze over hot waffles. Expert Tips Be sure to spray the waffle iron in between each waffle. The sugar from the cinnamon roll can make the waffles stick.These are also delicious served with real maple syrup instead of the cream cheese glaze. Add some toasted pecans for extra crunch.
**This sounds like a good idea that turns out TERRIBLY. I (Gessica) tried it and yes, it was delicious. HOWEVER, go ahead and enjoy cleaning out burnt cinnamon, sugar, and grease from your very non washable, new, and fantastically beautiful housewarming present Belgian waffle iron without scratching the hell out of it or short circuiting it for two hours... My advice? Bake the cinnamon rolls in a damn pan like a normal person... Cinnamon Roll Waffles

Cinnamon Sugar Pizza 1/4 c butter *make sure butter is cold* 1/4 c sugar 1/4 c brown sugar 1/4 tsp cinnamon dash of salt 1/2 c flour 1 can Pillsbury Cresent Rolls Cut in butter two sugars, cinnamon, salt and flour to form crumbs. Separate crescent roll dough into 8 triangles. Sprinkle crumbs on top. Bake at 400 degrees F for 8-12 minutes. Glaze: 1/2 c powered sugar 1 Tbsp. softened butter 1-1/4 tsp. Vanilla 1 to 1-1/2 Tbsp.milk Drizzle over and enjoy :)

Apple Pie Breakfast Recipe: Combine all ingredients (1 c. steel cut oats, 3 diced apples, 1 c. apple juice, 3 c. water, 1/2 tsp cinnamon) in a crock pot and cook for 4-6 hours on low.

Steel cut oats are one of my favourite breakfast foods. Once cooked, this recipe keeps very well in the fridge for a couple of days. My husband and I usually eat for three mornings in a row when I make this recipe. Ingredients - 1 cup of steel cut oats* - 3 diced apples (I use Gala) - 1 cup apple juice (I use Oasis) - 3 cups water - 1/2 tsp cinnamon (optional) Directions - Slow Cooker For Best Results: Combine all ingredients in slow cooker and cook for 2-4 hours on high or 4-6 hours on low until it reaches the consistency that you like. Be sure to stir every hour or so. * You can also cook longer without stirring, but you have to add more water liquid and it does come out a bit mushier. Add an extra cup of liquid for 7-8 hours in the slow cooker. * It must be steel cut oats when cooked in the slow cooker, as regular oats get very soggy when cooked this way. You can find steel cut oats in your local grocery store (sometimes they are called "irish oats" or "pinhead oats"). If you would really rather use rolled oats, be sure to use the stovetop method below and adjust your liquid/cooking time accordingly. Directions - Stovetop Method A few people have asked me about a stovetop method since not everybody has a slow cooker, and let's face it, sometimes we don't know what we want for breakfast until the morning of. Below is a stove top method and it tastes similar, but I still prefer the slow cooker version better (the oats become softer the longer they cook). Combine all ingredients in a saucepan and bring to a boil. Simmer for about 30 minutes, or until it reaches the consistency that you like.

Healthy Banana Bread with honey and applesauce instead of sugar & oil. 350F, grease a 9x5" loaf pan. Combine 2c whole wheat flour, 1t baking soda, 1/4t salt. mix 1/2c sugar free applesauce and 3/4c honey. Stir in 2 beaten eggs and 3 overripe mashed bananas, chopped walnuts until well blended. Stir banana mixture into flour mixture just to moisten. Pour batter into prepared loaf pan. Bake for 60 to 65 minutes, until a tecome comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
