I used half of a small pack of baby carrots and tossed them in freshly ground salt and pepper and a drizzle of olive oil. I baked them at 400 in the oven for 20 minutes. I then pulled them out and drizzled about a tablespoon of local honey (trying to introduce that into our diets, because the Arizona allergy season is upon us) and tossed the carrots again and put them back in the oven to cook for another 10 minutes.
