Andouille Sausage= best. Add red potatoes only for 15 min then follow instructions as is. Zucchini & asparagus as substitutes. Add parmesan 5 minutes before done. Goes great with brown rice- could add scrambled eggs to rice for more protein/flavor!

3 zucchini Half of onion chopped 3 tomatoes Sauce- handful of chile arbol, tomatillos, clove garlic Cook zucchini and onion first, add tomatoes and sauce at end. Cook more add mozzerella cheese to top. Serve with tortillas.
