white chicken enchilada recipe Chicken enchiladas with green chili sour cream sauce *These are seriously so so good* 10 soft taco shells 2 cups cooked, shredded chicken 2 cups shredded Monterey Jack cheese 3 Tbsp. butter 3 Tbsp. flour 2 cups chicken broth 1 cup sour cream 1 (4 oz) can diced green chillies 1. Preheat oven to 350 degrees. Grease a 9x13 pan 2. Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan. 3. In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly. 4. Stir in sour cream and chilies. Do not bring to boil, you don't want curdled sour cream. 5. Pour over enchiladas and top with remaining cheese. 6. Bake 22 min and then under high broil for 3 min to brown the cheese.

Since making chicken rollatini stuffed with prosciutto and cheesea few weeks back my husband has been craving chicken rollatini the way he grew up eating it, stuffed with cheese and topped with sauce and more cheese. I had to sneak some spinach in them against his will, but he was very pleased with the final results. I guess you can say this is a cross between my Chicken Parmigianaand Spinach Lasagna Rolls. Perfect for a large crowd, or to feed a hungry family. These are very filling, I served this with a big salad and I was very content with just one piece. These re-heated beautifully the next day and we were happy to enjoy them again for leftovers. Enjoy!! I've made Parmesan chicken bundles. These are different because you use crescent rolls and stuff them with the chicken recipe! I would use a rotisserie chicken.
Chicken pot pie bundles! Just use rotisserie chicken, fat free cream cheese, low fat crescent rolls, add minced carrots and celery. Super easy and so good! Ingredients for Chicken Bundles 4 oz. cream cheese, softened 1-13 oz. can chicken (or equivalent cooked chicken, rotitsserie chicken, etc) 1 Tbs. sesame seeds 1/4 tsp. parsley 2 cans
Chicken Bundles, Chicken pockets •4 oz. cream cheese, softened •1-13 oz. can chicken (or equivalent cooked chicken, rotitsserie chicken, etc) •1 Tbs. sesame seeds •1/4 tsp. parsley •2 cans Pillsbury Crescent Rolls - leave in fridge until ready to use! •1 Tbs. finely chopped onion or dried minced onion
Ingredients for Chicken Bundles •4 oz. cream cheese, softened •1-13 oz. can chicken (or equivalent cooked chicken) •1 Tbs. sesame seeds •1/4 tsp. parsley •2 cans Pillsbury Crescent Rolls - leave in fridge until ready to use! •1 Tbs. finely chopped onion or dried minced onion Directions: Combine the above ingredients (minus the crescent rolls) and mix well. Open one 8 count package crescent rolls. DO NOT divide into triangles. Keep every 2 triangles together, forming 4 rectangles. Pinch the seams closed and pat each one out into a larger square. Put a spoonful of chicken/cream cheese mixture into the center of each square. Fold the corners up into the center, layering like flower petals so the roll is sealed. (Don't stress too much on the technique, fold them up press seams together to make a bundle.) Repeat with all 8 rectangles. You're going to worry that you're doing this wrong, but you're not, just do it, I promise they'll taste delicious. Place on a lightly greased cookie sheet and bake at 375 degrees until golden brown, about 15-20 minutes. OR.. I actually used a precooked rotisserie chicken & in place of reg. cream I used philadelphia cooking creme the Santa Fe Blend.

I made these for dinner with my leftover avocado mango salsa but these are also great for lunch or you can even serve them as appetizers.
