Crustless Spinach Quiche. The best way I know how to get my kids to eat spinach. I also add crumbled bacon and red peppers... or whatever else sounds good (like butternut squash). I use 1 cup LESS mozzarella cheese. The hubby can usually eat one pie pan all by himself :) so I've started doubling the recipe.
