LAILA'S ARABIC LENTIL SOUP I was in Bethlehem a few months ago, staying with a Palestinian family. Laila, my wonderful host taught me how to make this simple, easy Arabic lentil soup. 1 tablespoon olive oil  1 small onion, peeled and diced finely (1/2 cup when diced)  1 medium carrot, peeled and diced (1/2 cup when diced)  1-2 cloves of garlic, peeled and chopped  ½ heaping cup dried green or brown lentils  ½ teaspoon ground cumin  Salt to taste

TU-NO SALAD WRAPS 2 cans chickpeas/garbanzo beans  4 ribs celery  ½ red onion  2 tablespoons chopped fresh basil (or other fresh herb)  ¼ cup chopped curly or Italian parsley  1 avocado (optional)  1 bunch collard greens  1 package corn tortillas  DRESSING  ½ cup raw, plain cashews (or other nut) soaked in ½ cup water  3 tablespoons lemon juice  2 teaspoons apple cider or rice vinegar  1 tablespoon prepared/wet mustard  ½ teaspoon garlic powder  1-2 teaspoons kelp powder
