Mint lemonade. Yum, I just got a bunch of lemons yesterday, a great idea that I will be making soon when my indoor peppermint garden gets more established with 3-4 different types of mint, as I love to make and enjoy mojitos at home too, this would be great with the addition of bubbles form club soda or add vodka, limoncello or rum to add a kick for a refreshing adult beverage

Mint Lemonade: 1 C sugar, 1 C water (plus 3-4 C more), 5 springs fresh mint (plus more for garnish), 1 1/2 C fresh lemon juice (roughly 10 sm lemons), & several lemon slices for garnish. (Make simple syrup: bring 1 c water to a boil & stir in 1 C suagar until dissolved. Add mint, allow to steep 10-15 min while mix cools.) In large pitcher, combine lemon juice & simple syrup. Add 2 C water, stir, & taste. Add up to 2 more C water, depending on desired strength. Serve over ice w/ lemon & mint.
