Readable Eatables: Rosemary Bread (Macaroni Grill Bread) REally good, i would have added fresh rosemary though and more then just 1 tbs. Was great with olive oil and balsamic vinegar!

honey whole wheat banana bread recipe - I loved this. Really yummy and moist. Made into muffins, cooked for 18 mins. Made 16 regular sized muffins. I did 1/2 white flour and half wholemeal flour. Next time will substitute the coconut oil for apple sauce and try all wholemeal flour or 1/2 oat flour and 1/2 wholemeal.

A party where we all gathered to watch a football game that was most definitely not super (for a Colts fan, anyway). While the game itself was quite a disappointment, these egg rolls were anything but. This version is vegetarian with black beans, corn, spinach, and cheese. I’m sure they would be wonderful with some cooked chicken mixed in as well, but I like them as they are. They were gobbled up in almost no time, and I probably should have made a double batch. I absolutely love them, especially when paired with my beloved salsa. I’m sure we’ll be having them frequently – you know, to help drown our sorrows until next football season. Baked Southwestern Egg Rolls Printer-Friendly Version Ingredients: 2 cups frozen corn, thawed 1 (15 oz.) can black beans, rinsed and drained 1 (10 oz.) package frozen chopped spinach, thawed and squeezed dry 2 cups shredded Mexican cheese blend 1 (4 oz.) can diced green chiles, drained 4 green onions, chopped 1 tsp. ground cumin ½ tsp. chili powder 1 tsp. salt ½ tsp. pepper ¼ tsp. cayenne pepper 1 package egg roll wrappers (about 24 total) Directions: In a large bowl, combine everything but the egg roll wrappers. Mix well to blend. Lay an egg roll wrapper out on a work surface so that one of the corners is pointing toward you and place ¼ cup of the filling in the center. Fold the tip closest to you up over the filling, roll a bit, then take the points pointing outward and fold them in toward the center. Continue rolling into an egg roll shape until a small part of the remaining point is still free. Dip a finger in water or beaten egg and lightly brush on the edges of the free corner. Finish rolling and press to seal closed. Repeat with the remaining wrappers and filling. Preheat the oven to 425˚ F. Lightly oil a baking sheet with cooking spray. Place the sealed egg rolls on the baking sheet seam side down and spray the tops of the egg rolls with cooking spray. 15 Minute Creamy Avocado Pasta Creamy, thick, and rich with lots of garlic flavour and a hint of lemon. This is my newest favourite pasta dish. The avocado works wonderfully in this recipe to create a sauce so creamy and thick, you will think there is cream hiding in there. Inspired by My Recipe.org. Yield: Serves 2 Ingredients: 1 medium sized ripe Avocado, pitted 1/2 lemon, juiced + lemon zest to garnish 2-3 garlic cloves, to taste (I used 3 and it was quite garlicky, but if you are not a big fan of garlic use 1 clove) 1/2 tsp kosher salt, or to taste ~1/4 cup Fresh Basil, (probably optional) 2 tbsp extra virgin olive oil 2 servings/6 oz of your choice of pasta (I used 3oz of spelt and 3 oz of Kamut spaghetti) Freshly ground black pepper, to taste Directions: 1. Bring several cups of water to a boil in a medium sized pot. Add in your pasta, reduce heat to medium, and cook until Al Dente, about 8-10 minutes. 2. Meanwhile, make the sauce by placing the garlic cloves, lemon juice, and olive oil into a food processor. Process until smooth. Now add in the pitted avocado, basil, and salt. Process until smooth and creamy. 3. When pasta is done cooking, drain and rinse in a strainer and place pasta into a large bowl. Pour on sauce and toss until fully combined. Garnish with lemon zest and black pepper. Serve immediately. Makes 2 servings. Please note: This dish does not reheat well due to the avocado in the sauce. Please serve immediately.
