1 Dried Chile Negro 1 Dried Chile Pasilla-Anchos 2 Dried Chile Guajillo 2 Dried Chile Californias 1 tsp. Dried Oregano 2 tsp. Ground Paprika 2 tsp. Ground Cumin 1 ½ Cups Water 2 Whole Chipotles in sauce (canned) ½ Large Spanish Onion, cubed 2 Cloves Garlic 5 Roma Tomatoes ½ Bunch of Cilantro ½ tbsp. Salt

I made these in a Fettuccine shape, but you can also make a Spaghetti shape with a mandolin or food processor. I simply used a vegetable peeler to get thin strips. Pesto: 1 C. Fresh Basil 1 C. Fresh Spinach 3/4 C. Frozen (defrosted or blanched) Peas 1/4 C. Pine Nuts 1 Clove Garlic 1 TBSP Olive Oil Blend in the food processor until smooth. I topped mine with some fresh, grated Parmesan Cheese. Yumm!!

Raw Vegetable Chow-Mein: Peanut Sauce: 1 Tbsp. Peanut Oil (or Vegetable Oil) 1 Tbsp. Fresh Grated Ginger 2 Garlic Cloves 2 Tbsp. Chili Garlic Sauce 1 ½ C. Low Sodium Soy Sauce 2 C. Vegetable Stock ½ C. Peanut Butter 2 Tbsp. Brown Sugar Juice of 1 Lime 1 Tbsp. Cornstarch & 2 Tbsp. Cold Water (Slurry, it thickens the sauce) Fried Tofu Raw Veggies: Carrots Zucchini Red and Orange Bell Peppers Broccoli

Brown Sugar Juice of 1 Lime 1 Tbsp. Cornstarch & 2 Tbsp.
