Marinate thick sliced tomatoes with balsamic vinegar for 1 hour. Bake at 350 for about 7 min. Saute spinach and garlic with a dash of salt and lemon juice. Put spinach on top of tomatoes and sprinkle with low fat cheese of your choice. Broil till cheese is golden!
Spinach Burgers 1 T. extra-virgin olive oil, 1 clove garlic crushed, 1 red onion, chopped, 1 box, 10 oz. frozen spinach, defrosted, 2 t. dried oregano, 1/4 lb. feta crumbles, 1 1/3 lb. ground turkey breast or ground beef, 1 T. grill seasoning Heat large nonstick skillet over med. heat. Mix all ingredients (squeeze spinach dry). Make into 4 burgers and cook on med. high 6 min on each side.
Low Carb Lasagna - you use zucchini instead of noodles!// I made this for dinner tonight - the family really liked it! The meat sauce had GREAT flavor. I didn't make any substitutions, either. :) Next time, I'll buy more zucchini so I can have more layers, though.
