Today has been a productive day full of baking. I made my boyfriend’s favorite cookies for his birthday. My Protein Pumpkin Cookies are packed full of flavor and protein at 67 calories per cookie. I love pumpkin and I love using it all year round rather than just saving it for fall. This recipe is super easy and quick to throw together. Plus, you can eat the batter! There are no eggs in this recipe, so I find myself struggling to make it to the baking process. The batter is so yummy. Who said pumpkin was only an ingredient for the fall? Ingredients: 1 cup of Pumpkin Puree 1 cup of Old Fashioned Rolled Oats 1 scoop of Vanilla Whey Protein Powder 1/4 cup of Unsweetened Almond Milk 1/4 cup of Applesauce 1 tbsp of Cinnamon 1 tbsp of Pumpkin Pie Spice Optional: 1/4 cup of Walnuts or any other kind of nut you like or you could add chocolate chips Combine all ingredients in a large bowl then using a spoon scoop a portion of the batter onto a non-stick baking sheet. With this amount of batter, I usually scoop and bake 12 cookies. Bake at 350 degrees for 20-25 mins. Enjoy! Recipe makes 12 servings. Per serving: 66 calories; 2.5g fat; 8.6g carbs; 2.2 fiber; 2g sugar; 3.8g protein. Get your pumpkin baking on!
