    Quinoa Vegetable Salad with Lemon-Basil Dressing ~ 1c uncooked quinoa; 15 oz can garbanzo beans, rinsed and drained; 3 Roma tomatoes; 1 orange bell pepper; 1½c corn; 4 green onions ~ Dressing: 2 TBsp olive oil; 2 TBsp fresh lemon juice; 1½ tsp basil ~ Rinse quinoa, and cook according to pkg directions; let cool Whisk together olive oil, lemon juice, and basil.
